Vegetables and fruit pickle

 Making pickles from vegetables and fruits is a delicious way to preserve them and enhance their flavors. Here are two simple recipes: one for mixed vegetable pickles and another for fruit pickles.


### Mixed Vegetable Pickle

 





Ingredients:

- 2 cups of assorted vegetables (carrots, cucumbers, cauliflower, green beans, etc.), cut into bite-sized pieces

- 1 cup white vinegar

- 1 cup water

- 1/4 cup sugar

- 2 tbsp salt

- 2 cloves garlic, sliced

- 1 tsp mustard seeds

- 1 tsp black peppercorns

- 1 tsp dill seeds (optional)

- 1/2 tsp red chili flakes (optional)


Instructions:

1. Blanch the Vegetables: Bring a pot of water to a boil. Add the vegetables and blanch for 1-2 minutes. Remove and plunge into ice water to stop the cooking. Drain and set aside.

2. Prepare the Pickling Brine: In a saucepan, combine vinegar, water, sugar, and salt. Bring to a boil, stirring to dissolve the sugar and salt. Remove from heat.

3. Fill the Jars:Divide garlic, mustard seeds, black peppercorns, dill seeds, and red chili flakes (if using) among sterilized jars. Pack the blanched vegetables into the jars.

4. Add the Brine: Pour the hot brine over the vegetables, ensuring they are fully submerged. Leave a small space at the top.

5. Seal and Store: Seal the jars with lids and let them cool to room temperature. Store in the refrigerator for at least 24 hours before eating to let the flavors meld. They can be kept in the refrigerator for up to 2 weeks.


### Fruit Pickle


 

 


Ingredients:

- 2 cups of assorted fruits (apples, pears, peaches, pineapple), cut into bite-sized pieces

- 1 cup apple cider vinegar

- 1/2 cup water

- 1/2 cup sugar

- 1 tbsp salt

- 1 cinnamon stick

- 1 tsp whole cloves

- 1 tsp allspice berries

- 1-inch piece of fresh ginger, sliced


Instructions:

1. Prepare the Fruits: Peel and cut the fruits into bite-sized pieces. Set aside.

2. Prepare the Pickling Brine: In a saucepan, combine apple cider vinegar, water, sugar, and salt. Add the cinnamon stick, cloves, allspice berries, and ginger. Bring to a boil, stirring to dissolve the sugar and salt. Simmer for 5 minutes to infuse the flavors.

3. Fill the Jars: Pack the fruits into sterilized jars. You can layer the fruits for a more attractive appearance.

4. Add the Brine: Pour the hot brine over the fruits, ensuring they are fully submerged. Leave a small space at the top.

5. Seal and Store: Seal the jars with lids and let them cool to room temperature. Store in the refrigerator for at least 24 hours before eating to let the flavors meld. They can be kept in the refrigerator for up to 2 weeks.
